以薏米和珍珠为主要原料,经过酶解、过滤、调配等工艺制得品味纯正的薏米珍珠复合饮料.通过正交试验,确定最佳调配组合为:蔗糖4%,香精0.1%,薏米、珍珠的比例为3∶2.对饮料的可溶性固形物、酸度、还原糖、金属元素、氨基酸含量等指标进行测定.结果为,可溶性固形物:3.7%;pH:5.52(15.7℃);还原糖含量:1.5 mg/mL.Zn、Mg、Na、Fe、Mn、Ca、K等7种金属元素的含量分别为0.0974、3.1447、152.4100、0.3464、0.1298、102.4700、23.0640μg/mL.Cd、Pb、Cr、Cu、Co等均未测出.且含有Asp、Thr、Ser、Glu、Gly、Ala、Val、Met、Ile、Leu、Tyr、Phe、Lys、His、Arg和Pro等16种氨基酸.

@@@@In this paper, coix seed and pearl powder were hydrolyzed with enzyme, filtrated and blended to produce pure taste health beverage. With the help of the orthogonal test, the best formula was that sugar was 4%, essence was 0.1%, coix seed∶pearl was 3∶2. The properties of beverage were tested. The results showed that the soluble solid was 3.7%, pH was 5.52(15.7℃), reducing sugar was 1.5 mg/mL. The contents of metal elements of Zn, Mg, Na, Fe, Mn, Ca, K were 0.097 4, 3.144 7, 152.410 0, 0.346 4, 0.129 8, 102.470 0, 23.064 0μg/mL, respectively. There were no metal elements such as Cd , Pb, Cr, Cu and Co. The amino acids were also tested, the results showed that there were 16 kinds of amino acids, for example, Asp, Thr, Ser, Glu, Gly, Ala, Val, Met, Ile, Leu, Tyr, Phe, Lys, His, Arg and Pro.
