以红辣椒为原料,丙酮为提取溶剂,采用超声波辅助有机溶剂法提取辣椒红色素,通过单因素试验和正交试验设计考察了料液比、超声温度、超声时间等主要工艺参数对提取效率的影响,并优化了提取工艺.结果表明,应用超声波辅助有机溶剂法提取辣椒红色素的工艺路线是正确可行的,所提取产品的光谱特性及特征吸收峰均与辣椒红色素标准图谱基本吻合;用丙酮提取的辣椒红色素相对色素量最大,且色价高;超声波辅助有机溶剂法提取辣椒红色素的最优工艺条件为:以丙酮为提取溶剂,料液比为1∶8(g/mL),超声温度为35℃,超声时间为30 min.在此最优条件下,辣椒红色素的色价可达到139.4.该提取工艺具有操作简单安全,生产成本低廉,产品质量高等优点,可供工业生产辣椒红色素参考.

@@@@Hot red peppers as raw material, paprika red pigments were prepared with extraction solvent of acetone using the method of ultrasonic-assisted organic solvent extraction in this study. The influences of main process parameters, including ratios of solid material to solvent volume, ultrasonic temperatures and ultrasonic time on extraction efficiency of paprika red pigments were compared and analyzed;moreover, the extraction process was optimized via single-factor tests and a four-factor three-level orthogonal array experimental design [L9 (34)]. The results showed that the method of ultrasonic-assisted organic solvent extraction was an effective and practicable one for paprika red pigments extraction, and the spectral properties and characteristic absorption peak of paprika red pigments were similar to that of standard compound. The relative quantity and chroma of paprika red pigments reached their maximum values when acetone was used as extraction solvent. And the most suitable conditions for paprika red pigments extraction were as follows:acetone was used as extraction solvent, ratio of solid material to solventvolumewas1∶8 (g/mL), ultrasonictemperaturewas35℃andultrasonictimewas30 min. And the chroma of paprika red pigments reached 139.4 when the optimal conditions were met. Therefore, the ultrasonic-assisted organic solvent extraction process was with easy operation and high safety, low cost, high product quality, and providedreferencevalueforfurtherindustrialproductionofpaprikaredpigments.
