以云抗10号大叶种茶为研究对象,分别采摘其芽头、第一叶、第二叶、第三叶、第四叶和茶梗,分析其生化特性.结果表明:芽头的总灰分、可溶性糖、铁、锰和氟元素含量低于叶片中的含量,而水溶性灰分(占总灰分比例)、粗纤维、铜、锌、茶氨酸和咖啡碱的含量高于叶片中的含量,芽头的茶多酚、水浸出物和酯型儿茶素含量低于嫩叶,高于老叶.茶梗的总灰分、水浸出物、茶多酚、铜、氟、咖啡碱、儿茶素总量均低于芽头和叶片,而粗纤维、铁和茶氨酸含量高于芽头和叶片.不同芽叶生化成分变异系数高于15%的有铜、锌、锰、氟、粗纤维、可溶性糖、茶氨酸、咖啡碱、儿茶素及其单体类物质,由此表明不同芽叶的生化成分差异较大.
以雲抗10號大葉種茶為研究對象,分彆採摘其芽頭、第一葉、第二葉、第三葉、第四葉和茶梗,分析其生化特性.結果錶明:芽頭的總灰分、可溶性糖、鐵、錳和氟元素含量低于葉片中的含量,而水溶性灰分(佔總灰分比例)、粗纖維、銅、鋅、茶氨痠和咖啡堿的含量高于葉片中的含量,芽頭的茶多酚、水浸齣物和酯型兒茶素含量低于嫩葉,高于老葉.茶梗的總灰分、水浸齣物、茶多酚、銅、氟、咖啡堿、兒茶素總量均低于芽頭和葉片,而粗纖維、鐵和茶氨痠含量高于芽頭和葉片.不同芽葉生化成分變異繫數高于15%的有銅、鋅、錳、氟、粗纖維、可溶性糖、茶氨痠、咖啡堿、兒茶素及其單體類物質,由此錶明不同芽葉的生化成分差異較大.

The biochemical compositions in tea buds, first leaf, second leaf, third leaf, fourth leaf and tea-stalk were analyzed, which picked from the shoots of Yunkang 10 (Camellia sinensis), a kind of big leaf species. The results showed that the content of total ash, soluble sugar, iron (Fe), manganese (Mn) and fluoride (F) in tea buds were lower than those of tea leaves, the content of water soluble ash, crude fiber, copper (Cu), zinc (Zn), theanine and caffeine in tea buds were higher than tea leaves, and the content of tea polyphenols, water extracts and ester-catechins in tea buds were lower than young leaves but higher than old leaves. The content of total ash, water extracts, tea polyphenols, Cu, F, caffeine and catechins in tea-stalk were lower than buds and leaves, and the content of crude fiber, Fe and theanine in tea-stalk were higher than buds and leaves. The coefficients of variation calculated from the content of Cu, Zn, Mn, F, crude fiber, soluble sugars, theanine, caffeine and catechins were more than 15% in different tea buds and leaves, which suggested that biochemical compositions are very different in tea buds and leaves.
