Product features of fresh noodles were described in brief,This paper introduces various preservation techniques in the preservation of fresh noodles at home and abroad. These preservation technologys include pH of preservation,additives preservation,non–thermal sterilization technology, cold storage,process preservation,modified atmosphere packaging and so on. This paper also discusses some new–type preservation methods suitable for fresh noodles.
