黑小麦色素是从蓝粒、紫粒、紫黑粒、黑粒小麦中提取花青苷,是一类安全、无毒天然食用色素.黑小麦色素以酸性溶剂提取,含多种花色苷,主要活性物质为花青素–3–葡萄糖苷;黑小麦色素性质稳定,具很好抗氧化活性,作为天然食品添加剂,可用于食品、药品、化妆品、染色剂等.该文综述黑小麦色素提取工艺、化学结构、理化性质和应用价值,对加强该色素深入研究和综合开发具有一定参考价值.
