食品包装印刷油墨包括食品接触油墨和制品上非食品接触表面上使用的油墨.如果油墨的质量达不到安全食用的标准,油墨中的有毒有害化学物质,例如重金属、残留溶剂、有机挥发物以及多环芳烃等有毒有害物质可发生化学迁移,对食品内容物造成污染,其中苯类残留物对人的危害最大,易引发疾病.本文通过选用可食性材料:柠檬黄色素、胭脂红色素、蔗糖、蒸馏水、黄原胶、壳聚糖溶液等,配制可食性油墨,并对其印品密度、牢固度、光泽度以及色差值进行测定,最后将可食性油墨与普通丝印油墨在色差方面的异同进行比较.加大对可食性油墨的研究与应用,普及更加绿色环保的油墨在食品包装领域的应用,才能让食品包装更安全.

The ink used in packaging and printing included one kind of ink which must contact with food and some must not. If the quality of the ink up to less than safe for consumption standards. Toxic and hazardous chem-icals in the ink, such as heavy metals, residual solvents, volatile organic compounds, polycyclic aromatic hydro-carbons and other toxic substances, these things may have chemical migration. The results would be that the food was polluted. About this substances, benzene residue which was the worst thing for human beings could lead to disease easily. Some edible materials were selected in this article, for example, tartrazine, carmine dye, sucrose, distilled water, xanthan gum, chitosan solution. These materials were used for Preparation of the edible ink. Then, the printed product density, firmness, gloss, and the color value could be measured. Finally, the similarities and differences in the chromatic aberrations between edible ink screen printing ink were compared. Thought this paper we can know that the research and application of edible ink was necessary. Meanwhile, in order to get safer food. Application of more green ink in the field of food packaging would be more and more urgent.
