试验比较原料乳中三种菌落总数的测定方法.分别采用国家标准GB/T4789.2—2010、世界乳品联合会国际标准IDF100A:1987和美国食品与药品监督局FDA BAM—2001标准中三种菌落总数的检测方法对原料乳中菌落总数进行测定比较分析.结果表明,3种检测方法之间存在显著性差异,IDF100A:1987的检出率最高,菌落易于分辨,但检验周期较长,不利于快速检测;在检测原料乳上,FDA BAM—2001优于GB/T 4789.2—2010,其共同优点为方法简单,检验周期短.

Three detection methods of the total count of bacteria was compared in raw milk. GB/T4789.2—2010, IDF100A:1987 and FDA BAM—2001 were used respectively to test the total count of bacteria in raw milk. The result showed that there were significant differences among the three methods. The detection rate of IDF100A:1987 was the highest, and the bacteria colo?nies on the medium were easily distinguished, but the test period of IDF100A:1987 was longer than other two methods, so it wasn't applied to rapid detection. The FDA BAM—2001 was bet?ter than GB/T 4789.2—2010 in raw milk, and the common advantages of them were simplicity of operation and the shorter inspection periods.
