冰温贮藏作为第3代物理保鲜技术,已引起越来越多的关注,但是作为冰温贮藏技术的主要冰温库的设计构造却少有研究.在对影响冰温库温度波动的众多因素分析的基础上,认为供冷方式、库体结构及控制方式是最重要的3个因素,并利用FLUENT软件进行了模拟分析.通过在冰温库中实际运用这些技术,效果很好,在空库的条件下,库温波动只有0.3℃.这些研究工作为冰温技术的推广奠定了良好的基础.

As the third generation of physical preservation technologies of fresh foods, the ice-temperature technology has being paid more attentions, but few attentions were paid on its construction. Based on the analysis of factors affecting the temperature fluctuation in the ice-temperature store, the type of the supplying cool, the structure of the wall and the type of the controlling were considered as the most important factors, whose effect were studied by FLUENT software. By using these technologies in practices, they were proved to provide a good effect. Under the condition of the unloaded store, the temperature fluctuation was only between-0.3℃and 0.3℃. These works provided a theoretical base for the application of the ice-temperature technology.
