饮食文化是中国悠久历史文化的重要组成部分,内涵丰富、博大精深.随着对外贸易的进一步扩大和全球化程度的不断加深,中国与国际交往日益频繁.外国朋友在品尝中国美食的同时,也想了解每道菜名的含义、使用原料、烹饪方法等.因此,中餐菜肴的准确英译在传播中华饮食文化上起着重要的作用.本文以宣传中国饮食文化为出发点,分析了中餐菜名和主食在英译中的基本原则,并结合具体示例提出了六种中餐菜名英译的方法和建议.

Dietary culture, abundant in connotation, broad and profound, is an important part of history culture in China. With the further broadening of foreign trade and deepening of reform and open, there is increasingly frequent contact between China and International society. While tasting the delicious foods, the foreign visitors also want to know about the dishes names, using materials and cookery ways. So the correct translation of Chinese dished plays an important role in disseminating China’s dietary culture. With the purpose of publicizing Chinese dietary cultures, the paper discusses some principles of English translation of Chinese dishes and foods, in both oral and written situations, summarizes six concrete and practical ways in the translation practice and briefly analyses some demerits of several popular examples in this respect and offers some improved ones from the author.
