以葡萄皮为原料,采用酸法提取葡萄皮中的水溶性膳食纤维,再加以科学调配,研制出一种富含膳食纤维的葡萄皮饮料.通过单因素试验和正交试验确定了酸法提取水溶性膳食纤维的工艺条件.即加入葡萄皮重25倍的水,用柠檬酸调整pH为2,在70℃下浸提2 h;并通过正交试验对产品的风味进行调配研究,得出最佳配方为:葡萄皮浸提液稀释2倍,加入15%的玫瑰花浸提液,3%的西瓜汁,15%木糖醇能得到颜色诱人,香气浓郁,具有保健作用的葡萄皮高纤饮料.

@@@@The grape skins as raw material, high dietary fiber drinks were researched with acid solution extraction water-soluble dietary fiber. Orthogonal test was decided for acid extraction process conditions of soluble dietary fiber based on single factor experiments. Results showed that the best extraction conditions of water-soluble dietary fiber from grape skins were the ratio 1∶25, temperature 70℃, pH value 2 by citric acid, extracting time 2 h, respectively. The flavors of product were concocted by orthogonal array. The best recipe of product were leaching solution of 2 times diluted, join watermelon juice 3 %, rose leaching solution 15 %, xylitol 15%, respectively. Finally, high dietary fiber drinks can be received with attractive color, aroma and health care.
