总酸与总酯是酒分析中的两个重要指标,对酒的生产及其品质有很大的影响.常规检测总酸的方法有直接滴定法、酸度计法等,而总酯则采用皂化中和法加以测定.由于二项指标分别测定,且均系手工操作,因而操作繁琐,误差较大.文章应用自动电位滴定法进行分析,测定了3类6种酒中总酸与总酯的含量,获得了较为满意的结果.

Total acid and total alcohol ester is an important indicator of the two, the quality of the wine production and has a great influence.
