以榴莲、牛奶、玉米淀粉、白砂糖为原料，以感官评定得分作为评价指标，通过单因素试验和正交试验确定榴莲酥馅心的最佳配方。试验结果表明，榴莲酥馅心的最佳配方为：榴莲果肉200 g、牛奶20 mL、玉米淀粉的使用量占榴莲果肉的25%、白砂糖占25%。

This paper mainly studied the formulation of durian crisp stuffing. By single factor test and orthogonal test, with sensory evaluation score as indicators, we determined the best formula of durian crisp filling. The best formula of durian crisp filling was:durian pulp 200 g, milk 20 mL, corn starch 25%, and sugar 25%.
