在冷链运输过程中，控制冷链运输的时长和温度能有效的减少运输过程中的损失和能耗，使得果蔬快速、优质地运输到目的地。模拟了三种冷链运输方式：EPS保温箱运输、蓄冷保温箱运输和5℃冷链运输；通过对番茄品温、营养物质和感官评价来确定不同条件下的不同运输方式。结果表明，EPS保温箱适合短距离运输，运输时长不超过24 h；蓄冷保温箱适合中短距离运输，时长不超过48 h；5℃冷链运输适合长距离运输，番茄在72 h后仍能保持良好的品质。

재랭련운수과정중，공제랭련운수적시장화온도능유효적감소운수과정중적손실화능모，사득과소쾌속、우질지운수도목적지。모의료삼충랭련운수방식：EPS보온상운수、축랭보온상운수화5℃랭련운수；통과대번가품온、영양물질화감관평개래학정불동조건하적불동운수방식。결과표명，EPS보온상괄합단거리운수，운수시장불초과24 h；축랭보온상괄합중단거리운수，시장불초과48 h；5℃랭련운수괄합장거리운수，번가재72 h후잉능보지량호적품질。
In the process of cold chain transportation, controlling the transport time and the temperature can effectively reduce the loss and energy consumption and can transport the fruits and vegetables to the destination fastly and effectively. Three cold chain modes of transportation were simulated, including EPS thermal insulation box transportation, cold storage insulation box transportation and 5℃ cold-chain transportation; based on the temperature, nutrients and sensory evaluation of tomatoes, the different modes of transportation under different conditions were determined. The results show that, EPS thermal insulation box transportation is suitable for short distance transportation, and the transport time is not more than 24 h;cold storage insulation box transportation is suitable for short and middle distance transportation, and the transport time is not more than 48 h;5℃ cold-chain transportation is suitable for long distance transportation, and the tomatoes can still maintain good quality after 72 h.
