本试验用七八成熟的草莓为材料,对草莓果实采用不同浓度的壳聚糖处理涂膜,并分别在4℃和常温(12℃~15℃)下贮藏,测定贮藏期间经壳聚糖处理以后草莓的失重率,可溶性固形物的含量、VC含量、总糖含量、总酸含量和呼吸强度的变化,研究壳聚糖涂膜对草莓果实保鲜的影响。试验结果表明,在草莓的贮藏中,壳聚糖涂膜处理对草莓有一定的保鲜作用,以浓度1.25%壳聚糖溶液处理保鲜效果最佳。尤其是在4℃条件下,浓度1.25%壳聚糖溶液处理明显降低了草莓果实的腐烂程度与失重率,延缓了果实贮藏后期可溶性固形物、有机酸含量、总糖含量以及VC的降低,减少了呼吸损耗,提高了草莓果实贮藏期间品质。
本試驗用七八成熟的草莓為材料,對草莓果實採用不同濃度的殼聚糖處理塗膜,併分彆在4℃和常溫(12℃~15℃)下貯藏,測定貯藏期間經殼聚糖處理以後草莓的失重率,可溶性固形物的含量、VC含量、總糖含量、總痠含量和呼吸彊度的變化,研究殼聚糖塗膜對草莓果實保鮮的影響。試驗結果錶明,在草莓的貯藏中,殼聚糖塗膜處理對草莓有一定的保鮮作用,以濃度1.25%殼聚糖溶液處理保鮮效果最佳。尤其是在4℃條件下,濃度1.25%殼聚糖溶液處理明顯降低瞭草莓果實的腐爛程度與失重率,延緩瞭果實貯藏後期可溶性固形物、有機痠含量、總糖含量以及VC的降低,減少瞭呼吸損耗,提高瞭草莓果實貯藏期間品質。
본시험용칠팔성숙적초매위재료,대초매과실채용불동농도적각취당처리도막,병분별재4℃화상온(12℃~15℃)하저장,측정저장기간경각취당처리이후초매적실중솔,가용성고형물적함량、VC함량、총당함량、총산함량화호흡강도적변화,연구각취당도막대초매과실보선적영향。시험결과표명,재초매적저장중,각취당도막처리대초매유일정적보선작용,이농도1.25%각취당용액처리보선효과최가。우기시재4℃조건하,농도1.25%각취당용액처리명현강저료초매과실적부란정도여실중솔,연완료과실저장후기가용성고형물、유궤산함량、총당함량이급VC적강저,감소료호흡손모,제고료초매과실저장기간품질。
The experiment with seven or eight ripe strawberry on strawberry fruit as material , the different concentration of chitosan treatment, and at 4℃and at room temperature to 12℃-15℃under storage, measured during the storage of strawberry treated by chitosan after the weight loss rate, soluble solids content, vitamin C content, total sugar content, total acid content and the changes of respiration intensity, study of chitosan coating on preservation of strawberry fruits effect. The test results showed that, in the strawberry storage, chitosan coating on strawberry has certain effect, with a concentration of 1.25 % chitosan solution preservation effect best. Especially under the condition of 4 DEG C, the concentration of 1.25%chitosan solution treatment significantly reduces the strawberry fruit decay degree and rate of weight loss, delay fruit storage period of soluble solids, organic acid content, total sugar content and vitamin C reduce, decrease of breathing loss, improves the quality of strawberry fruit during storage.
