以壳聚糖作为保鲜剂研究了缢蛏分别在不同温度和不同包装贮藏条件下保鲜中挥发性盐基氮(TVB-N)、TBA值、pH、细菌总数以及质构特性等指标的变化。结果表明:缢蛏在壳聚糖和外部条件协助下,能够很好地抑制TVB-N值、TBA值、pH及细菌总数。不同的包装条件为真空包装和保鲜袋包装,其中保鲜袋包装与壳聚糖协同时相较于真空包装,保鲜效果要好;冰藏条件贮藏时,保鲜效果要好。通过上述研究最终得出最佳包装方式为无菌保鲜袋,最佳贮藏温度为贮藏在冰藏条件。

The changes of the various indices of Razor Clams (Sinonovacula constricta)by preservatives (chitosan) treated during storage under different temperatures or different packagings were studied in this paper. These indicators were total volatile base nitrogen (TVB-N), TBA values, total number of bacteria, pH and the texture quality. The results showed that the combination of preservatives (chitosan) and external conditions could well prevent total volatile base nitrogen (TVB-N), TBA values, total number of bacteria,pH values and the texture quality. The different packing conditions were vacuum packaging and fresh bag packaging , the fresh bag packaging with chitosan compared with vacuum packing had a better fresh-keeping effect. Different temperature were 0℃,4℃and ice fresh-keeping condition.ice fresh-keeping conditions compared to other temperatures had a better fresh-keeping effect. The results were that the best packing was the fresh bag packaging and the best storage temperature was ice temperature condition through the research.
