目的:建立了皮蛋中6种营养元素的火焰原子吸收测定方法。方法利用微波消解处理样品,火焰原子吸收法测定皮蛋蛋白和皮蛋蛋黄中钙、镁、铁、锌、铜和锰。结果皮蛋中含量丰富的营养元素,回收率为97.2%~110.0%,样品进行5次平行测定, RSD为1.87%~5.61%。结论方法具有快速、简便、灵敏、准确的优点,适于皮蛋中6种营养元素的测定。

목적:건립료피단중6충영양원소적화염원자흡수측정방법。방법이용미파소해처리양품,화염원자흡수법측정피단단백화피단단황중개、미、철、자、동화맹。결과피단중함량봉부적영양원소,회수솔위97.2%~110.0%,양품진행5차평행측정, RSD위1.87%~5.61%。결론방법구유쾌속、간편、령민、준학적우점,괄우피단중6충영양원소적측정。
Objective To establish FAAS method for determining 6 nutritional elements in preserved eggs. Methods Microware digestion was used to dispose the samples; FAAS method was applied to determine Ca, Mg, Mn, Fe, Zn and Cu preserved eggs.Results There are rich content of nutrient elements in preserved egg, the average recovery rate was 97.2%~110.0%, the RSD in the 6 determinations was 1.87%~5.61%.Conclusion This method is rapid, simple sensitive and accurate, it is applicable for the determination of 6 nutritional elements in preserved eggs.
