本文采用胶体几丁质为底物,研究了红曲霉液态发酵产几丁质酶.研究结果表明:胶体几丁质的添加能有效诱导红曲霉合成几丁质酶.在培养基中添加0.8%(W/V)胶体几丁质的同时,添加0.4%(W/V)葡萄糖,有利于红曲霉的生长以及几丁质酶的合成,发酵48 h几丁质酶活力达到最高的0.3504U/mL.
本文採用膠體幾丁質為底物,研究瞭紅麯黴液態髮酵產幾丁質酶.研究結果錶明:膠體幾丁質的添加能有效誘導紅麯黴閤成幾丁質酶.在培養基中添加0.8%(W/V)膠體幾丁質的同時,添加0.4%(W/V)葡萄糖,有利于紅麯黴的生長以及幾丁質酶的閤成,髮酵48 h幾丁質酶活力達到最高的0.3504U/mL.

The study aimed to explore the chitinase production by Monascus liquid ferment-ation.The chitinase enzyme assay was carried out with colloidal chitin as a substrate.The experimental results indi-cate that addition of colloidal chitin helps the accumulation of chitinase.The highest activity of chitinase of 0.350 4 U/mL was obtained at 48 hours in themedium with the glucose 0.4%(W/V)and colloidal chitin 0.8%(W/V).
