研究了一种通过颜色变化能够识别猪肉新鲜程度的指示卡。以溴甲酚紫为指示剂,定性滤纸为载体,由0.3%、0.4%、0.5%、0.6%、0.7%5种不同浓度溴甲酚紫乙醇溶液制备出鲜度指示卡,将其置于托盘鲜肉包装内进行储藏试验。用半微量定氮法定期测定出猪肉挥发性盐基氮含量,并定期检测指示卡的L、a、b值,计算出其色差值ΔE。结果表明,ΔE值与挥发性盐基氮(TVB-N )含量呈线性关系,制备的鲜度指示卡对猪肉新鲜度有指示作用,0.5%溴甲酚紫溶液制备的指示卡效果最为显著,指示卡对不同重量肉均有良好指示效果。

A kind of color changing indicating card with different freshness of pork was developed.With bromocresol purple as an indicator,qualitative filter paper as a carrier,five different concentrations (0.3%, 0.4%,0.5%,0.6%,0.7%)of ethanol bromocresol purple indicator cards were prepared.Storage experiment for fresh meat was conducted after incorporation the indicating cards into tray package.The amount of total vol-atile basic nitrogen (TVB-N)of pork was determined regularly by semi-micro kjeldah method,and the L,a,b values of indicating cards were regularly tested,then values of color difference (ΔE)were calculated.The re-sults showed that,there is a linear relationship between ΔE values and the amount of TVB-N.And the fresh-ness indicating cards can display the freshness of pork.Indicating card with of 0.5%(w/w)bromocresol pur-ple solution has the most prominent effectiveness.The good indication effect of indicating cards on different weights pork was validated.
