油果(Yukwa)是一种以糯米为原料的韩国传统食品,深受韩国民众的喜爱。现如今,油果已经成为许多韩国民众的日常食品,在韩国大约有200家油果制作工厂,目前国内对于油果的报道比较少见。本文综述油果的生产工艺及其研究进展,为中国膨化食品的生产提供参考。
油果(Yukwa)是一種以糯米為原料的韓國傳統食品,深受韓國民衆的喜愛。現如今,油果已經成為許多韓國民衆的日常食品,在韓國大約有200傢油果製作工廠,目前國內對于油果的報道比較少見。本文綜述油果的生產工藝及其研究進展,為中國膨化食品的生產提供參攷。

Yukwa was a Korean traditional snack made from waxy rice, and was popular with Korean people. Nowadays, Yukwa has become a daily food for some people, and there are about 200 Yukwa factories in Korea. Till now, there have been few reports on Yukwa in China. This paper introduced the manufacturing process of Yukwa and its advances, and was proposed for the development of puffed snacks in China.
