开发新型的天然运动饮料是目前运动饮料发展的一个重要方向,本试验以樱桃、胡萝卜为主要原料,采用正交试验设计、感官评价等方法,对樱桃-胡萝卜汁复合运动饮料生产工艺进行研究。结果表明:樱桃-胡萝卜汁复合运动饮料的最佳配方为樱桃原汁与胡萝卜原汁配比为1.5∶1,糖含量10%,酸含量0.20%。复合饮料加入0.05%黄原胶+0.10%耐酸CMC复合增稠剂,经均质微粒化处理,其产品的稳定效果最佳,研制的运动饮料口感佳、色泽优、风味独特,综合品质最优。

Developing new natural sports drink is an important direction for the development of sports drinks.The test took cherry and carrot as materials,used orthogonal experimental design,sensory evaluation and so on methods to research the production of mixed cherry-carrot juice sports drink. The results showed that the best formula of cherry-carrot composite beverage was that the ratio of cherry juice and carrot juice was 1.5∶1, the sugar content 10 % and acid content 0.20 %.Adding 0.05 % xanthan gum and 0.10 % CMC acid compound thickener, composite beverage had the best stability via homogeneous particulates processing, with good stability, good taste, excellent color, unique flavor, and the best integrated quality.
