我国糟渍食品历史悠久,文化底蕴深厚。糟渍食品始于周,兴于宋,盛于清。其独特的风味,深受老百姓喜爱,特别是江南地区的人们对其更是青睐有加。然而,时至今日,糟渍食品却早已没落,发展面临桎梏。本文对糟渍食品的发展历史、现状进行阐述,分析其衰败的原因,并对其未来发展进行展望。

Zao-pickled foods have a long history and rich cultural heritage in China. It got started in Zhou Dynasty, began to flourish in the Song Dynasty, became popular in Qing Dynasty. With the unique flavor, Zao-pickled foods are preferred by people in Southern Yangtze. Today, Zao-pickled foods have been declining for a long time. The development of Zao-pickled foods faces many difficulties. This paper will elaborate on three aspects of history, current situation and expectation, analyze the reasons for the de-cline, and put forward suggestions for their future development.
