通过pH示差法定量,研究紫扁豆花色苷的提取工艺。通过单因素和正交试验确定最佳提取工艺条件,结果表明,pH为3,提取乙醇质量分数为60%,料液比1∶12,温度70℃,提取时间60 min得到花色苷最大提取含量为0.7331 mg/g。同时对紫扁豆花色苷树脂纯化进行初步研究。

The extraction technology for anthocyanins from Lablab purpureus was explored. The anthocya?nins were quantitatively analyzed through the pH differential method.The optimal extraction technological con?ditions were obtained by single factor and orthogonal experiments.The results showed that the maximum extrac?tion of anthocyanin content was 0.733 1 mg/g under the optimal extracting conditions,which were as follows:pH=3,ethanol concentration 60%,temperature 70 ℃,solid-liquid ratio 1 ∶ 12,extraction time 60 min. At the same time,the purification process with resin for anthocyanins from Lablab purpureus was examined.
