为了延长鲜切桃块的货架期，保持其色泽及品质，笔者以市售成熟桃为原料，研究了鲜切桃在5℃下贮藏期间的色泽及多酚氧化酶活性变化的影响。结果表明：D-异抗坏血酸钠能有效控制鲜切桃的褐变程度，显著抑制其PPO和POD的活性，具有良好的保鲜护色效果，可以用作鲜切桃的品质保持处理剂。
為瞭延長鮮切桃塊的貨架期，保持其色澤及品質，筆者以市售成熟桃為原料，研究瞭鮮切桃在5℃下貯藏期間的色澤及多酚氧化酶活性變化的影響。結果錶明：D-異抗壞血痠鈉能有效控製鮮切桃的褐變程度，顯著抑製其PPO和POD的活性，具有良好的保鮮護色效果，可以用作鮮切桃的品質保持處理劑。

In order to extend shelflif of the fresh-cut peachs and preserve its color and quality. By the market mature peach as the raw material, the authors studied the effects of them on qualities and oxidase activities of fresh-cut peache fruits during storage at 5℃. The results showed that D-sodium erythorbate could effectively control the degree of browning of fresh cut peach, and inhibit the activity of PPO and POD. So D-sodium erythorbate has good color and fresh protection effect. It can be used to the treatment agent of fresh-cut peachs.
