采用60 Co-γ射线源40、70、100、200 Gy 等4个辐照剂量处理高粱乌米,对其感官及生理生化指标的试验结果分析可知,在高粱乌米的保鲜水平上,辐射处理可起到更好的作用:(1)可有效的延长高粱乌米的保鲜期,且随着辐射剂量的增加其保鲜期相应延长;(2)对高粱乌米的质量损失具有较好的抑制作用,失重率随着辐照剂量的增加而显著降低,适当设计辐照剂量高量能更好的抑制高粱乌米的质量损失;(3)加剧乌米膜脂过氧化,但适当的剂量能有效的降低乌米菌体的 PPO 活力,可抑制或者延缓其褐变的发生;(4)可损伤高粱乌米菌体的抗氧化水平,降低乌米菌体的 CAT 活力,但剂量较低时可有一定程度的恢复,而剂量过高时会对其抗氧化能力造成不可恢复的损伤;(5)可破坏高粱乌米的膜结构,加剧膜脂过氧化,不利于其保鲜储藏,但较低的辐照剂量对高粱乌米菌体的 MDA 含量影响较小。综合考虑射线照射效率和高粱乌米营养物质的损失等原因,60 Co-γ射线处理高粱乌米的最佳剂量为70~100 Gy。

채용60 Co-γ사선원40、70、100、200 Gy 등4개복조제량처리고량오미,대기감관급생리생화지표적시험결과분석가지,재고량오미적보선수평상,복사처리가기도경호적작용:(1)가유효적연장고량오미적보선기,차수착복사제량적증가기보선기상응연장;(2)대고량오미적질량손실구유교호적억제작용,실중솔수착복조제량적증가이현저강저,괄당설계복조제량고량능경호적억제고량오미적질량손실;(3)가극오미막지과양화,단괄당적제량능유효적강저오미균체적 PPO 활력,가억제혹자연완기갈변적발생;(4)가손상고량오미균체적항양화수평,강저오미균체적 CAT 활력,단제량교저시가유일정정도적회복,이제량과고시회대기항양화능력조성불가회복적손상;(5)가파배고량오미적막결구,가극막지과양화,불리우기보선저장,단교저적복조제량대고량오미균체적 MDA 함량영향교소。종합고필사선조사효솔화고량오미영양물질적손실등원인,60 Co-γ사선처리고량오미적최가제량위70~100 Gy。
This paper use different radiation dose,including 40,70,100,200 Gy to processed sorghum wumi and some physiological and biochemical indexes were determined regularly,the result showed that the treat-ment could achieved a desirable effect on fresh-keeping of sorghum wumi.(1 )It can effectively prolong The fresh-keeping period of sorghum wumi and with the increasing radiation dose The fresh-keeping period of sor-ghum wumi is prolonged accordingly.(2)It has better inhibition to loss of weight and with the increasing radia-tion dose,the loss of weight significantly reduces.The appropriate design of radiation dose can reduce the loss of weight of sorghum wumi better.(3)It can Intensify membrane lipid peroxidation of sorghum wumi.But the appropriate dose can effectively reduce the PPO activity of sorghum wumi and may inhibit or delay the brown stain.(4)It can damage the antioxidant level of sorghum wumi and reduce the CATactivity,But the lower dose may have a certain degree of recovery,while higher dose can cause unrecoverable damage to its antioxidant a-bility.(5)It may destabilize the Membrane structure of sorghum wumi,Increase membrane lipid peroxidation and be not conducive to the fresh-keeping storage.But at lower radiation dose,the content of MDA is less af-fected.Considering the ray radiation efficiency,nutrient loss and other reasons,The optimal dose of 60 Co-γray treatment of sorghum wumi is 70 ~100 Gy.
