大曲的质量与大曲微生态的微生物种类、数量及理化指标等相关。通过对泸型大曲冬夏两季培菌期大曲微生态指标跟踪检测,并将冬夏两季培菌期大曲微生态指标进行比较,结果表明:冬季大曲品温比夏季低,水分散失比夏季慢;冬季大曲总体微生物数量比夏季多,微生物的种类与夏季相当;冬季大曲氨态氮含量和糖化力均比夏季高,但酯化力比夏季低。
大麯的質量與大麯微生態的微生物種類、數量及理化指標等相關。通過對瀘型大麯鼕夏兩季培菌期大麯微生態指標跟蹤檢測,併將鼕夏兩季培菌期大麯微生態指標進行比較,結果錶明:鼕季大麯品溫比夏季低,水分散失比夏季慢;鼕季大麯總體微生物數量比夏季多,微生物的種類與夏季相噹;鼕季大麯氨態氮含量和糖化力均比夏季高,但酯化力比夏季低。

The quality evaluation of daqu is related to many factors ,such as the species and numbers of the microorganisms,the physical-chemical indexes,etc. By tracking and detection of the Micro ecological indicators in winter and summer about Luzhou laojiao Daqu which is during the bacteria culture period. At the same time , the microecological index of the winter and the summer are compared , the results shoed that: the product temperature in winter was lower than in summer , the rate of moisture loss in winter was slower than in summer , too; The microbe quantity of Daqu in winter was more than summer's , the microbial species in winter and summer are equally. The ammonia nitrogen content and the saccharifying power of Daqu in winter is higher than in summer, but the esterifying power of Daqu in winter was lower than in summer.
