In this paper,the flavonoids from pomelo peel is extract with the method of ethanol-extraction. Through single- factor tests and orthogonal experimental design,the optimum extraction conditions are determined as 60%,1∶25,80 ℃and 2 h for ethanol concentration,solid/liquid ratio,temperature and extraction time. Under the optimized conditions,the extractions of the pomelo peel gives rise to an average flavonoids recovery of 0.566 8%.
