文章研制了一种瓜蒌皮饮料(T PB ),分析其功效成分,并研究在储藏期间抗氧化活性的变化。结果表明:TPB的膳食纤维、维生素C、总酚及总黄酮的质量浓度分别为4.58 g/L、43.27μg/mL、96.90μg GAE/mL和21.00 mg/L ,共含有14种氨基酸,其中丙氨酸、苏氨酸、精氨酸及天冬氨酸的浓度较高;在60 d储藏期间,其抗氧化活性逐渐降低,储藏期结束后其 DPPH ·清除率、ABTS ·清除率及亚铁还原能力分别降至28.40%、35.21%、1.07 mmol AAE/mL ,高于金银花醇饮料的抗氧化能力。由此可见,瓜蒌皮饮料储藏60 d后仍具有较高的抗氧化活性,说明瓜蒌皮饮料是一种功效成分丰富的饮料,具有较强的抗氧化功能。
文章研製瞭一種瓜蔞皮飲料(T PB ),分析其功效成分,併研究在儲藏期間抗氧化活性的變化。結果錶明:TPB的膳食纖維、維生素C、總酚及總黃酮的質量濃度分彆為4.58 g/L、43.27μg/mL、96.90μg GAE/mL和21.00 mg/L ,共含有14種氨基痠,其中丙氨痠、囌氨痠、精氨痠及天鼕氨痠的濃度較高;在60 d儲藏期間,其抗氧化活性逐漸降低,儲藏期結束後其 DPPH ·清除率、ABTS ·清除率及亞鐵還原能力分彆降至28.40%、35.21%、1.07 mmol AAE/mL ,高于金銀花醇飲料的抗氧化能力。由此可見,瓜蔞皮飲料儲藏60 d後仍具有較高的抗氧化活性,說明瓜蔞皮飲料是一種功效成分豐富的飲料,具有較彊的抗氧化功能。

Trichosanthis pericarpium beverage(TPB) was prepared ,its nutritional composition was an‐alyzed and the change of its antioxidant activity during the storage was measured .The results showed that the total contents of dietary fiber ,vitamin C ,total phenolics and total flavonoids of TPB were 4.58 g/L ,43.27 μg/mL ,96.90μg GAE/mL and 21.00 mg/L ,respectively .Fourteen kinds of amino acids were detected in TPB ,and the contents of alanine(Ala) ,threonine(Thr) ,arginine(Arg) and as‐partic acid(Asp) were higher .During the 60 days of storage ,the antioxidant activity decreased gradu‐ally .After the storage ,DPPH · radical scavenging activity ,ABTS · scavenging activity and FRAP of TPB were 28.40% ,35.21% ,and 1.07 mmol AAE/mL .The antioxidant activity of TPB was signifi‐cantly higher than that of honeysuckle alcohol .Therefore ,TPB was a nutrient‐rich drink owning strong antioxidative and antiaging activities .
