This paper introduced blueberries and blueberry wine, and discussed blueberry wine fermentation process and control points in the process. Fermentation process and influencing factors were analyzed. Treatment of blueberries, sugar additives, different yeast, the main fermentation process, pectin decomposition would have impacts on the quality of blueberry wine. Factors influencing the fermentation process were discussed in details to optimize the fermentation process and improve product quality.
