Tannins are a class of polyphenol compounds with complex structures, are widely distributed in nature, even with a large number of plants closely related to people's daily lives, such as vegetables, fruit, spices and ingredients also contain tannin.This paper summarizes the methods of determination and the biological activities of tannins,which could provide references for further study of tannin.
