为了解金鳟(Oncorhynchus mykiss Walbaum)在贵州省山泉水养殖条件下的营养特点,采用生化方法测定了山泉水养殖金鳟肌肉中营养成分。结果显示:金鳟含肉率为79.60%,肌肉中水分、粗蛋白质、粗脂肪、灰分含量分别为75.45%、20.30%、2.61%、1.08%。肌肉中所测到的18种氨基酸总量为63.76%,其中8种必需氨基酸占26.07%,非必需氨基酸占37.69%,鲜味氨基酸占23.39%。肌肉中含有25种脂肪酸,其中饱和脂肪酸占20.83%,单不饱和脂肪酸占31.25%,多不饱和脂肪酸占47.92%。矿质元素中常量元素以钾和磷较高,分别为19030.00 mg/kg 和8913.00 mg/kg;微量元素以铁和锌含量较高,分别为35.03 mg/kg 和12.31 mg/kg。结果表明:与甘肃省养殖金鳟相比,贵州省山泉水养殖金鳟肌肉中肌肉的含肉率和常规营养成分含量与其相当,必需氨基酸总量/氨基酸总量(∑EAA/∑TAA)和必需氨基酸总量/非必须氨基酸总量(∑EAA/∑NEAA)均低于甘肃省养殖金鳟,但符合 WHO/FAO 提出的参考蛋白模式,且贵州省山泉水养殖金鳟肌肉中不饱和脂肪酸含量和微量元素含量均高于甘肃省养殖金鳟,说明山泉水养殖下的金鳟肌肉具有更好的营养价值。

The muscle nutritional components of Oncorhynchus mykiss Walbaum (O.mykiss Walbaum) cultured in spring water of Guizhou was determined by biochemical to explore its muscle nutritional characteristics .The results showed that:the flesh content of O.mykiss Walbaum was 79.60%, the moisture, crude protein, crude lipid and ash contents were 75.45%, 20.30%, 2.61% and 1.08%, respectively.There were 18 kinds of amino acids in muscle and the total con-tent was 63.76%, in which the contents of 8 kinds of essential amino acids , non -essential amino acids and delicious a -mino acids were 26.07%, 37.69% and 23.39%, respectively.The muscle was abundant with 25 kinds of fatty acid, in which the saturated fatty acids accounted for 20.83%, the monounsaturated fatty acids accounted for 31.25%, the poly-unsaturated fatty acids accounted for 47.92%.The major elements K and P were 19 030.00 mg/kg and 8 913.00 mg/kg, respectively.The trace elements Fe and Zn were 35.03 mg/kg and 12.31 mg/kg, respectively.The research showed that :compared with O.mykiss Walbaum of Gansu province, the flesh content and general nutritional components of O.mykiss Walbaum cultured in spring water were similar to O.mykiss Walbaum of Gansu province, and the ratio of ∑EAA/∑TAA and ∑EAA/∑NEAA were lower, but it accorded with the protein reference pattern provided by WHO /FAO, and the con-tent of unsaturated fatty acid and trace element were higher than that of O.mykiss of Gansu province, which proved that the muscle of O.mykiss Walbaum cultured in spring water has better nutritional value .
