以毛笋壳为原料,通过正交试验得到了酸碱法提取不溶性膳食纤维的最佳提取工艺。试验结果表明,最佳工艺条件为: NaOH浓度为1.0 mol/L, NaOH处理温度为30℃, H2 SO4处理温度为50℃,最佳工艺条件下产品纯度为92.06%,产品膨胀力、持水力分别达到6.107 g/g、8.730 g/g,对亚硝酸盐( NO-2)吸附力较好,6 h后最高可达10.21 g/g ( pH=2)、8.91 g/g (pH=7),对不饱和脂肪酸的吸附能力为1.0160 g/g,对饱和脂肪酸的吸附能力为1.3183 g/g,可作为食品添加剂应用于食品行业。

The process for extraction of the insoluble dietary fiber from bamboo shells was studied. The optimal condition of the extraction was gained by orthogonal experiment. The optimal conditions were that NaOH concentration was 1. 0 mol/L, extracting temperature was 30 ℃ and the temperature of H2 SO4 was 50 ℃, the purity was 92. 06%, expansion capacity and water hold capacity was 6. 107 g/g, 8. 730 g/g, respectively. The data showed that significant absorbed capacity of IDF on NO-2 was under pH 2 and pH 7. The data showed that IDF absorbed NO-2 increased while the time increased, and pH 2 was better than pH 7. The capacity that IDF absorbed unsaturated fatty acids was better than saturated fatty.
