To understand the quality of Phyllostachys nigra var.henonis shoots,the nutritional composition in bamboo shoots of Phyllostachys nigra var.henonis was analyzed. The results showed that the bamboo shoots not only contained 17 kinds of amino acids and crude proteins ,but rich in mineral elements. The shoots of Phyllostachys nigra var.henonis was a vegetable with nutrition and a delicious taste ,so it could be appropriately developed.
