This paper introduces brown sugar as an ecological product of cane juice. It not only presents the history and process characteristics of brown sugar, but also its healthy effects, and extracting nourish products with high added value from by-products. It summarizes the development of brown sugar in the world. Finally, it discusses the economical benefits and developing bottlenecks of brown sugar production, and preliminary solutions are put forward.
