从理论和技术上探讨了用甘蔗原料制高纯度结晶果糖的方法。首先,介绍了蔗糖用酸或酶水解变为葡萄糖与果糖混合液,再用色层法、结晶法、钙化法和有机溶剂法等分离;其次,介绍了将分离出来的葡萄糖转化为果糖的异构酶法、氧化发酵法等方法;最后,经比较后得出,用模拟移动床吸附分离和异构酶法,再加上浓缩、结晶的四步流程法,在大型工业化生产较为可行,而浓缩、结晶分蜜等设备可引用糖厂的装备和操作经验。该法是甘蔗高值化深加工、提高经济效益的好途径。

The paper discusses the theory and technology for producing high purity crystalline fructose with sugarcane. First of all, it introduces hydrolyzation of sucrose into glucose and fructose by acid or enzyme;the separation methods of the two monosaccharides by chromatographic separation, crystallization, calcification and organic solvent method, etc. Then it discusses the transformation of glucose into fructose by isomerization or fermentation, etc. Finally, it compared the results using simulated moving bed adsorption separation and isomerization combined with concentration, crystallization. It is feasible in large scale production. It also put forward that the concentration, crystallization and purging equipment could make use of those currently used in sugar mills. It can be considered as a good way of deep processing the sugarcane into high value products, hence improving economic benefits.
