目的:了解梅州市餐饮业自制饮料、熟肉制品、盒饭、凉拌菜以及餐(饮)具的卫生现状,为监管部门提供参考信息。方法:按照广东省食品药品监督管理局2013年餐饮服务食品安全监督抽检工作计划的要求,从餐饮业抽取468批样品对其微生物污染情况进行检测和统计分析。结果:检测的94批自制饮料,51批菌落总数>100 CFU·mL-1,27批大肠菌群≥0.3 MPN·mL-1,2批检出金黄色葡萄球菌,均未检出沙门氏菌和志贺氏菌。17批盒饭和17批凉拌菜均未检出致病菌。75批熟肉制品15批检出金黄色葡萄球菌,均未检出沙门氏菌和志贺氏菌。145批集中消毒餐具有21批检出大肠菌群,120批自制餐具有38批检出大肠菌群。结论:梅州市餐饮环节食品的卫生情况令人担忧,尤其是熟肉制品的金黄色葡萄球菌污染问题较为突出,提示餐饮服务食品安全监管部门应加强监督和管理,防止食源性疾病发生。

목적:료해매주시찬음업자제음료、숙육제품、합반、량반채이급찬(음)구적위생현상,위감관부문제공삼고신식。방법:안조광동성식품약품감독관리국2013년찬음복무식품안전감독추검공작계화적요구,종찬음업추취468비양품대기미생물오염정황진행검측화통계분석。결과:검측적94비자제음료,51비균락총수>100 CFU·mL-1,27비대장균군≥0.3 MPN·mL-1,2비검출금황색포도구균,균미검출사문씨균화지하씨균。17비합반화17비량반채균미검출치병균。75비숙육제품15비검출금황색포도구균,균미검출사문씨균화지하씨균。145비집중소독찬구유21비검출대장균군,120비자제찬구유38비검출대장균군。결론:매주시찬음배절식품적위생정황령인담우,우기시숙육제품적금황색포도구균오염문제교위돌출,제시찬음복무식품안전감관부문응가강감독화관리,방지식원성질병발생。
Objective:To understand the sanitation status of self-made beverage, cooked meat, box lunch, salad, tableware and kitchenware in Meizhou catering industry, so as to provide reference for regulatory authorities. Methods:Totally 468 batches of samples were collected from the restaurants according to the catering service food safety supervision and inspection requirements of the work plan in 2013 of Guangdong Provincial Food and Drug Administration and microbial contamination was detected according to the national hygienic standards and typical methods. Results:In 94 batches of self-made drink detected, the total number of colonies of 51 batches was more than 100 CFU·mL-1, the coliform detected in 27 batches was greater than or equal to 0.3 MPN·mL-1, Staphylococcus aureus was detected in 2 batches, while Salmonella and Shigella were not found in all the batches. Pathogenic bacteria were not found in 17 batches of box lunch and 17 batches of salad. In 75 batches of cooked meat detected, Staphylococcus aureus was detected in 15 batches, while Salmonella and Shigella were not found in all the batches. Totally coliform was detected in 21 batches among 145 batches of centralized disinfection tableware and 38 batches among 120 batches of self-made tableware. Conclusion: The sanitation situation of catering industry in Meizhou is worrying, especially for the contamination of Staphylococcus aureus in cooked meat. It is necessary to strengthen the administration of food hygienic and promulgate safe practices to prevent foodborne diseases.
