蜡质是一种天然物质，主要存在于植物油料的种壳和细胞壁中，随压榨和萃取工艺进入植物油，米糠油和葵花籽油中含量较多，可通过脱蜡除去，测定植物油中蜡含量能有效控制油脂品质。通过分析比较国内外常用的测定植物油中蜡含量的不溶物测定法、浊度仪测定法和色谱法等方法的优缺点及适用范围，有利于针对植物油中蜡含量的高低，选择准确合理的测定方法，并对气质联用在蜡质成分分析中的应用进行了介绍。提出建立准确的蜡含量测定分析方法在油脂品质控制和蜡质潜在应用方面具有重要意义。

Wax is a natural compound, which mainly exists in the seed shell and cell wall of oil plants, incorporating into vegetable oil during the pressing and extraction procedures. Rice bran oil and sunflower seed oil have higher contents of wax which can be partially removed by dewaxing. The determination of wax content in vegetable oil can effectively control the quality of vegetable oil. The strengths, weaknesses and the adaptation ranges of insoluble method,turbidimetric method and gas chromatography technology which could determine the content of wax in vegetable oil at home and abroad were analysed and com-pared. It was conducive to select accurate and reasonable determination method in terms of the wax con-tent in vegetable oil, meanwhile the application of GC-MS in the analysis of wax components was intro-duced. It was proposed that the establishment of accurate determination and analysis method of wax con-tent had very important significance in quality control of oil and potential applications of wax.
