建立了一种利用毛细管气相色谱法同时测定红枣白兰地中的甲醇高级醇的测定方法,该方法快速、准确、操作简单。结果表明,方法的相对标准偏差不大于0.34%,样品的加标回收率在97.56%~102.48%。利用该方法对不同陈酿容器中的红枣白兰地甲醇高级醇进行测定,3种陈酿容器中,橡木桶对降低甲醇含量效果最好,经270 d陈酿,由3.36 g/L下降到2.74 g/L;橡木桶中酒样的高级醇总量呈增长趋势,瓷坛和塑料桶中酒样的高级醇总量则有不同程度的下降。

A method for simultaneous determination of methanol and higher alcohols content in jujube brandy by capillary GC was established. The method was simple, rapid, sensitive, and accurate. The results showed that RSD of this method was below 0.34%, and the recovery ratio was between 97.56%~102.48%. In this study, this method was used to determine methanol and higher alcohols content in jujube brandy in different aging containers. The results suggested that, oak barrels had the best effects in reducing methanol content (dropped from 3.36 g/L to 2.74 g/L after 270 d aging), higher alcohols content in brandy increased in oak barrels, however, higher alcohols content decreased more or less in porcelain jars and in plastic barrels.
