以东北大米为原料,研制出一种新型、健康的适合搭配各种食物食用的方便食品———大米纸。采用单因素试验和正交试验确定大米纸的最佳工艺及配方,结果表明干燥条件对产品的物理性质及感官品质的影响最大,其次是气蒸时间、玉米淀粉用量、大米粉用量。大米纸的最佳配方为东北大米75%,玉米淀粉25%,大米粉细度100目;最佳工艺条件为气蒸3 min,干燥条件30℃,70 min。由于产品中不含任何添加剂,以此配方及工艺条件生产的大米纸综合品质优良,安全、健康。

Rice paper is based in the northeast city as the main raw material. It is a kind of new type and healthy food,which is suitable for all kinds of food to eat. It is based on single factor and orthogonal investigations to determine the best production technology and the formula. Drying conditions is the best influencing factors on the physical properties and sensory quality of the products,the steaming time,the amount of corn starch,the concentration of slurry are the secondary factors. The best formula of rice paper:rice 75%,corn starch 25%,slurry fineness 100 orders;the extracting technical conditions:the steaming time 3 min,the drying conditions 30 ℃,70 min. This product does not contain any additives,the comprehensive quality of rice paper is based on the formulation and process conditions,which is safety and health.
