为了了解不同产地青稞中营养成分,对西北不同地区不同品种的13种青稞原料进行成分分析,包括水分、灰分、蛋白质、氨基酸、脂肪、脂肪酸及淀粉。结果表明:青稞原料中水分的质量分数为10.27%,灰分的质量分数为1.92%,蛋白质的质量分数为9.80%,脂肪质量分数在1.70%左右,而淀粉的质量分数在60.00%~75.00%。青稞原料中脂肪酸成分含有丰富的亚油酸以及较高的棕榈酸、油酸,具有良好的营养价值;同时,青稞中含有的必需氨基酸较为丰富,如Thr、Val、Met、ILe、Leu、Phe和Lys。
為瞭瞭解不同產地青稞中營養成分,對西北不同地區不同品種的13種青稞原料進行成分分析,包括水分、灰分、蛋白質、氨基痠、脂肪、脂肪痠及澱粉。結果錶明:青稞原料中水分的質量分數為10.27%,灰分的質量分數為1.92%,蛋白質的質量分數為9.80%,脂肪質量分數在1.70%左右,而澱粉的質量分數在60.00%~75.00%。青稞原料中脂肪痠成分含有豐富的亞油痠以及較高的棕櫚痠、油痠,具有良好的營養價值;同時,青稞中含有的必需氨基痠較為豐富,如Thr、Val、Met、ILe、Leu、Phe和Lys。
위료료해불동산지청과중영양성분,대서북불동지구불동품충적13충청과원료진행성분분석,포괄수분、회분、단백질、안기산、지방、지방산급정분。결과표명:청과원료중수분적질량분수위10.27%,회분적질량분수위1.92%,단백질적질량분수위9.80%,지방질량분수재1.70%좌우,이정분적질량분수재60.00%~75.00%。청과원료중지방산성분함유봉부적아유산이급교고적종려산、유산,구유량호적영양개치;동시,청과중함유적필수안기산교위봉부,여Thr、Val、Met、ILe、Leu、Phe화Lys。
In order to understand the nutritional ingredients in Hulless barley from different producing areas, nutrition ingredients,including moisture,ash,minerals,proteins,amino acids,fat,fatty acids,monosaccharide and starch,were analyzed in 13 kinds of Tibetan Hulless barley from different producing areas. Results showed that the mass ratio of moisture in raw materials of Hulless barley was10 . 27%,and the mass ratio of ash was 1 . 92%,pro-tein’s mass ratio is 9. 80%,the mass ratio of fat is 1. 70% and the mass ratio of starch is between 60. 00% and 75. 00%. Hulless barley is rich in linoleic acid,and owns higher cetylic acid and oleinic acid,with good nutritional value;Meanwhile,Hulless barley contains abundant essential amino acids,such as Thr,Val,Met,Ile,Leu,Phe and Lys.
