采用水蒸气蒸馏的方法对产于北京的两种红腐乳中的挥发性成分进行了提取,对萃取溶剂进行了优化,结果表明二氯甲烷是比较好的萃取溶剂。所得提取物经气相色谱-质谱联用仪分析,共鉴定出76种成分,其中酯类30种、醇类10种、酮类9种、醛类8种、吡嗪类4种、烯烃类4种、酚类3种、含氮化合物3种、醚类3种、酸类2种;两种红腐乳中都鉴定出的挥发性成分有48种;采用面积归一化法确定了它们的相对含量。实验结果表明用水蒸气蒸馏所得结果与文献报道的采用同时蒸馏萃取所得结果接近。

The volatile flavor constituents of two kinds of red sufu from Beij ing are extracted by steam distillation in order to analyze their volatile flavor compositions.The extraction solvents are chosen in order to obtain a better extraction solvent.The results show that dichloromethane is a suitable solvent. The extractives are analyzed by gas chromatography-mass spectrometry. Seventy-six compounds are identified,including 30 esters,10 alcohols,9 ketones,8 aldehydes,4 pyrazines, 4 alkenes,3 phenols,3 nitrogen-containing compounds,3 ethers,2 organic acids.There are 48 compounds which are common constituents in two kinds of red sufu.Their relative content is determined by peak area normalization method.The analytical results obtained by steam distillation extraction are similar to that of simultaneous distillation-extraction in literatures.
