Aflatoxin was a kind of toxic metabolite, which was produced by fungi (e.g., aspergillus flavus and parasitic aspergillus) and had very strong toxicity. It could damage the liver tissue of humans and animals strongly, would lead to seriously liver cancer and even death. Attentions were paid by more and more people. Analysis methods and research progress of precolumn derivatization , post-column derivatization and tandem mass spectrometry cooperated with high performance liquid chromatography technology were introduced respectively in food.
