分析某市现加工即食豆浆中脲酶、总固形物、蛋白质等理化指标,探讨豆浆的理化品质情况,对食用豆浆品质现状做出评价。结果表明,37%的豆浆存在不同程度的阳性脲酶(17%弱阳性,12%阳性,5%次强阳性,3%强阳性),存在安全隐患;蛋白质含量、总固形物、脲酶达不到标准的豆浆达41.46%,达标率较低。从理化指标的角度评价,此市现加工即食豆浆符合标准率低,理化品质低,即营养价值较低,主要体现在蛋白质含量偏低,同时存在较高的安全威胁。

분석모시현가공즉식두장중뇨매、총고형물、단백질등이화지표,탐토두장적이화품질정황,대식용두장품질현상주출평개。결과표명,37%적두장존재불동정도적양성뇨매(17%약양성,12%양성,5%차강양성,3%강양성),존재안전은환;단백질함량、총고형물、뇨매체불도표준적두장체41.46%,체표솔교저。종이화지표적각도평개,차시현가공즉식두장부합표준솔저,이화품질저,즉영양개치교저,주요체현재단백질함량편저,동시존재교고적안전위협。
Analyse the physical and chemical indicators in soybean milk about a city , such as urease , protein and total solids, explore the physical and chemical quality situation of soybean milk and make evaluation about the present situation of edible soybean milk quality. The results showed that 37%positive urease soya-bean milk is of different degree (17%weakly positive,12%positive, Strong positive 5%time,3%strong positive), and pose a safety hazard.;Because of protein content, total solids, urease can't meet the standard of soybean milk was 41.46%, and the success rate is low. From the perspective of the physical and chemical indicators , the city of soymilk conforms to the standard rate is low , the physical and chemical quality is low , the nutritional value is low, mainly reflected in the protein content is low, at the same time there is a higher security threats.
