目的：利用高效液相色谱法（HPLC）测定葡萄汁中抗癌成分反式白藜芦醇的含量，并研究其环境影响因素。方法：选取ZORBAX －C18（250mm ×4．6mm，5μm）色谱柱；流动相：70％水－30％乙腈；波长：306nm；流速：1ml ／min；进样量：20μl，葡萄汁经滤膜过滤后直接进样测定其中的反式白藜芦醇含量；并采用相同方法研究光照、温度及密封状况对其含量的影响。结果：淳果篮浓缩紫葡萄汁中反式白藜芦醇的含量为（1．64±0．07mg／l），汇源百分百的含量为（0．25±0．01mg／l），统一葡萄多中未检测到反式白藜芦醇。另外，阳光照射、升高温度、密封状况差都会导致反式白藜芦醇含量下降。结论：不同品牌的葡萄汁中反式白藜芦醇含量相差较大；低温避光密封条件下可减少葡萄汁中反式白藜芦醇的损失。
목적：이용고효액상색보법（HPLC）측정포도즙중항암성분반식백려호순적함량，병연구기배경영향인소。방법：선취ZORBAX －C18（250mm ×4．6mm，5μm）색보주；류동상：70％수－30％을정；파장：306nm；류속：1ml ／min；진양량：20μl，포도즙경려막과려후직접진양측정기중적반식백려호순함량；병채용상동방법연구광조、온도급밀봉상황대기함량적영향。결과：순과람농축자포도즙중반식백려호순적함량위（1．64±0．07mg／l），회원백분백적함량위（0．25±0．01mg／l），통일포도다중미검측도반식백려호순。령외，양광조사、승고온도、밀봉상황차도회도치반식백려호순함량하강。결론：불동품패적포도즙중반식백려호순함량상차교대；저온피광밀봉조건하가감소포도즙중반식백려호순적손실。
Objective To determine the content of trans -resveratrol,an anti -cancer active ingredient in grape juice,and to an-alyze the environmental influence factors of its content by high -performance liquid chromatography (HPLC).Methods All samples were determined by ZORBAX -C18 column (250mm ×4.6mm,5μm)at UV 306nm wavelength,using 70% water -30% acetoni-trile as the mobile phase.The determination of grape juice was carried out by direct injection.After the determination,the same chromatographic conditions and methods were used to study the influence of light,temperature and sealed condition on the content of trans -resveratrol.Results The concentrations of trans -resveratrol in Huiyuan grape juice and Chunguolan purple grape juice were (1.64 ±0.07mg/L)and (0.25 ±0.01mg/L),respectively.No trans -resveratrol was found in Tongyi grape juice.The results show that,sunlight,high temperature and poor seal condition decreased the content of trans -resveratrol.Conclusion The content of trans -resveratrol varies in different brands of grape juice.The grape juice should be stored in cool,dark and sealed conditions to maintain the content of trans -resveratrol.
