建立了基于高效液相色谱（HPLC）测定发酵乳中顺丁烯二酸含量的方法。用10%的乙醇溶液做提取剂，甲醇和磷酸盐缓冲液作为流动相，C18柱进行分离。当顺丁烯二酸的添加含量在1～500mg/kg时，加标回收率为87.3%～96.7%，相对标准偏差小于4%，定量检出限为0.5mg/kg。该方法具有快速、准确、稳定性好、灵敏度高等优点，可用于发酵乳中顺丁烯二酸含量的检测。

A method for the determination of the content of cis-2-Butenedioic acid in fermented milk by high performance liquid chromatography(HPLC) was developed. Cis-2-Butenedioic acid was extracted by the solution of 10%ethanol. The method was performed on C18 column, using methanol and phosphate as mobile phase. Cis-2-Butenedioic acid content was in the range of 1~500 mg/kg, the average spiked recoveries were between 87.3% and 96.7% with RSDs(n=6) less than 4%.The limit of quantitation was 0.5mg/kg. The results indicated that this method is accurate, simple and reproducible, and thus suitable for the analysis of the content of cis-2-Butenedioic acid in fermented milk.
