研究以微波消解作为前处理,用电感耦合等离子体-质谱(inductively coupled plasma-mass spectrometry,ICP-MS)作为检测手段,同时测定不同包装食醋中15种金属元素(Al,Cr,Fe,Cd,Mn, Cu,Zn,Ni,As,Se,Pb,Sb,Hg,Mg 和 Ba)。15种元素具有良好的线性关系(相关系数 r2≥0.99),方法的检出限范围是0.005~0.646 mg/L,平均回收率在82.99%~101.22%。研究表明:塑料、玻璃和陶瓷包装中的重金属均有迁移到食醋中。塑料包装的食醋稳定性较高,仅有8种元素含量增加。陶瓷包装的食醋稳定性较差,有11种元素含量增加,其中 Al,Cr,Mn,Zn 和 Mg 等元素含量明显增加。

A method for the simultaneous determination of 15 metal elements (Al,Cr,Fe,Cd,Mn, Cu,Zn,Ni,As,Se,Pb,Sb,Hg,Mg and Ba)in Chinese vinegar is developed by microwave digestion followed by inductively coupled plasma-mass spectrometry (ICP-MS ). Good linear relationship is found for all elements (r2 ≥0.99).The detection limits of the method range from 0.005~0.646 mg/L.The average recoveries are 82.99% ~ 101.22%,the significant differences in the content of each metal element are found among three commercial vinegar samples packaged with plastic,glass and ceramic materials respectively.Plastic packaged vinegar has the highest stability among the three packaged vinegar,the content of 8 elements increases only.The stability of ceramic packaged vinegar is poor,the content of 11 elements increases,in which,Al,Cr,Mn,Zn and Mg and other elements are significantly increased.
