为研究复合微生态制剂对肉鸡肌肉品质的应用效果,采取对比试验的方法,探讨添加复合微生态制剂对肉鸡氨基酸含量、营养成份的影响。结果表明:饲喂复合微生态制剂可以有效改善肉鸡的品质以及肉质的营养成分,表现为鸡肉的pH值、肉色和水分含量上升,肌肉的嫩度、粗蛋白含量显著提高(P<0.05),滴水损失、粗脂肪含量显著降低(P<0.05),氨基酸总量提高。
為研究複閤微生態製劑對肉鷄肌肉品質的應用效果,採取對比試驗的方法,探討添加複閤微生態製劑對肉鷄氨基痠含量、營養成份的影響。結果錶明:飼餵複閤微生態製劑可以有效改善肉鷄的品質以及肉質的營養成分,錶現為鷄肉的pH值、肉色和水分含量上升,肌肉的嫩度、粗蛋白含量顯著提高(P<0.05),滴水損失、粗脂肪含量顯著降低(P<0.05),氨基痠總量提高。
위연구복합미생태제제대육계기육품질적응용효과,채취대비시험적방법,탐토첨가복합미생태제제대육계안기산함량、영양성빈적영향。결과표명:사위복합미생태제제가이유효개선육계적품질이급육질적영양성분,표현위계육적pH치、육색화수분함량상승,기육적눈도、조단백함량현저제고(P<0.05),적수손실、조지방함량현저강저(P<0.05),안기산총량제고。
In order to research the application effect of compound microecological preparation on muscle quality of broiler, it used the method of contrast test to discuss the influence of adding compound microecological preparation on the content of amino acid and nutrition of broiler. The test result shows that feeding compound microecological preparation can effectively improve the quality of broiler and its meat nutrition;its expressions are the increasing of pH value, flesh’s color and MC. The tenderness of muscle and the content of crude protein were increased obviously (P<0.05), drip loss and the content of crude fat were decreased obviously (P<0.05), the total amount of amino acid was increased.
