There were large amounts of by-products produced during meat produces processing. Rational use of these resources offered the possibility to develop restructured meat product. The defini?tion, processing principle and technology, kinds of additive and mechanism of restructured meat were in?troduced. It would provide a theoretical basis for follow-up study.
