为了解贵州乌天麻的食用营养价值和开发贵州特色食品资源,采用常规分析法分析贵州乌天麻的营养成分。结果表明:乌天麻的营养成分为蛋白质含量5.8~6.8 g/100g、粗纤维素含量12.3~17.6 g/100g、淀粉含量26.1~31.1 g/100g、天麻素含量0.21%~0.23%、粗脂肪含量1.9 g/100g,氨基酸总量4.05~4.14 g/100 g,其中,必须氨基酸占氨基酸总量的44.93%;乌天麻含有丰富的微量元素,其中 Ca 为389.00~401.00 mg/kg,Fe 为79.99~137.68 mg/kg,Zn 为20.01~21.31 mg/kg,乌天麻中 VC和 VB2含量较高,分别为3.84~9.97 g/100g 和0.14~0.18 mg/kg,结果显示贵州乌天麻有较高的营养价值。
為瞭解貴州烏天痳的食用營養價值和開髮貴州特色食品資源,採用常規分析法分析貴州烏天痳的營養成分。結果錶明:烏天痳的營養成分為蛋白質含量5.8~6.8 g/100g、粗纖維素含量12.3~17.6 g/100g、澱粉含量26.1~31.1 g/100g、天痳素含量0.21%~0.23%、粗脂肪含量1.9 g/100g,氨基痠總量4.05~4.14 g/100 g,其中,必鬚氨基痠佔氨基痠總量的44.93%;烏天痳含有豐富的微量元素,其中 Ca 為389.00~401.00 mg/kg,Fe 為79.99~137.68 mg/kg,Zn 為20.01~21.31 mg/kg,烏天痳中 VC和 VB2含量較高,分彆為3.84~9.97 g/100g 和0.14~0.18 mg/kg,結果顯示貴州烏天痳有較高的營養價值。

To know the nutritional value of Guizhou G.elata and develop Guizhou specialty food resources.The authors analyzed the nutritional contents by conventional analysing method.Results:Protein(5.8~6.8 g/100g),crude fiber (12.3 ~ 17.6 g/100g),starch (26.1 ~ 31.1 g/100g),gastrodin (0.21%~0.23%),crude fat (1.9 g / 100 g);total amino acids (4.05 ~ 4.14 g/100g).The essential amino acid accounted for 44.93% of the total amino acids,and trace elements were rich in G.elata, including Ca (389.00~401.00 mg/kg),Fe (79.99~137.68 mg/kg),Zn (20.01~21.31 mg/kg),high VC (3.84~ 9.97 g/100g)and VB2 (0.14 ~ 0.18 mg/kg)content in G.elata,the result showed a higher nutritional value of Guizhou G.elata.
