Purple sweet potato%Pigment%Stability
研究pH值、温度、光照、金属离子、抗坏血酸、氧化剂和还原剂等因素对紫甘薯色素稳定性的影响,结果表明:色素在酸性条件下较稳定,对高温耐受性弱,光照、Fe2+、Fe3+、Mg2+能降低其稳定性,低浓度的Al3+具有增色作用,对氧化剂和还原剂较敏感。
研究pH值、溫度、光照、金屬離子、抗壞血痠、氧化劑和還原劑等因素對紫甘藷色素穩定性的影響,結果錶明:色素在痠性條件下較穩定,對高溫耐受性弱,光照、Fe2+、Fe3+、Mg2+能降低其穩定性,低濃度的Al3+具有增色作用,對氧化劑和還原劑較敏感。
연구pH치、온도、광조、금속리자、항배혈산、양화제화환원제등인소대자감서색소은정성적영향,결과표명:색소재산성조건하교은정,대고온내수성약,광조、Fe2+、Fe3+、Mg2+능강저기은정성,저농도적Al3+구유증색작용,대양화제화환원제교민감。
The effects of pH value, temperature, illumination intensity, metal ion, ascorbic acid, oxidant and reductant on the stability of purple sweet potato pigment were investigated. The results show that pigment is more stable in acidic conditions, high temperature resistance is weak, metal cation such as Fe2+、Fe3+、Mg2+ can reduce the stability of the pigment, low con-centration Al3+ has a considerable hyperchromism effect and the pigment is sensitive to the oxidizing and reducing agents.
