针对枝江白酒建立了含氮化合物和多元醇定量分析方法,进行了准确定量分析,为酒体设计及质量控制提供了理论指导。通过优化顶空固相微萃取和气相质谱条件,测定了样品中的含氮化合物;通过离子色谱测定了样品中多元醇。结果表明,测定12种含氮化合物时,该方法的相关系数在0.9879~0.9977之间,RSD在2.32%~12.23%之间,回收率在74.53%~117.98%之间,三甲基恶唑和2-丙基吡啶低于检出限,样品中含量最高的为四甲基吡嗪,达到10.36mg/L;测定10种多元醇时,该方法相关系数在0.9878~0.9995之间,RSD在0.05%~12.47%之间,回收率在73.76%~120.20%之间,丙三醇和葡萄糖含量较高,达到356.89mg/L和22.51mg/L,鼠李糖、山梨醇、甘露醇、麦芽糖醇这4中多元醇均低于检出限。检测结果对浓香型白酒的酒体风味构成有了更清晰的认识。

Quantitative analysis methods of nitrogen compounds and polyol were established for Zhijiang liquor , the accurate quantitative analysis were applied for the theory instruction of the liquor body design and quality control. Through the optimization of headspace solid phase micro extraction and gas chromatography mass spectrometry conditions, nitrogen compounds in the sample were determined;polyhydric alcohol samples were determined by ion chromatography. The results showed that, the determination of 12 kinds of nitrogen compounds, the method of correlation coefficient in 0.9879~0.9977, RSD in 2.32%~12.23%, the recovery rate in 74.53%~117.98%, three sulfamethoxazole and 2- isopropyl pyridine below detection limit, the four methyl pyrazine is the highest in the sample, reach 10.36mg/L;Determination of 10 polyhydric alcohol , the method of correlation coefficient in 0.9878~0.9995, RSD in 0.05%~12.47%, the recovery rate in 73.76%~120.20%.The content of glucose and glycerol were higher, reach 356.89mg/L and 22.51mg/L.Sorbitol, mannitol, Li Tang, maltitol, this 4 polyols were below detection limit. The results greatly enhanced the quantitative analysis level of Zhijiang liquor and had a clearer understanding of liquor body flavor of Luzhou-flavor liquor composition.
